- 1-2 Skin-on Filets
- 4 tbs. Salt
- 3 tbs. Pepper
- 2 tbs. Cornstarch
- 2 Tbs. Brown Sugar
- 1 Tbs. Olive Oil – for Skillet
- 4 Tbs. Honey
- 3 Tbs. Lime Juice
- 2 Tbs. Orange Juice
- Sea Salt (to taste)
- Pepper (to taste)
Salmon: For salmon prep, use paper towels to pat filets dry on both sides. Combine seasonings and sugar. Rub across both sides of filet. Heat about 1 Tbs. of olive oil in a non-stick skillet over medium high heat until oil begins to ripple. Place filet flesh side down in skillet and sear for 1-2 min per side. Do not disturb except to turn. Meanwhile heat oven to 400 degrees. After filets are all seared place on baking sheet in oven until internal temperature registers 145 degrees F.
Glaze: While salmon is in oven, combine all glaze ingredients in a small pot. Heat over low until smooth. Once salmon is cooked, glaze salmon evenly. Note: may want to increase glaze recipe for additional glaze to serve on the side.
Serve with salad, a cup of green veggies or one of our favorites, quinoa for some extra protein.
