This dish has become a fast and easy favorite. It is a nice way to spice up the weekly grind or celebrate the end of the week while getting a bit of protein in a relatively low calorie meal.
- 6-8 Tilapia Filets
- 1/2 to 1 bottle of Mike’s Hard Lemonade
- Salt to taste
- Pepper to taste
- A thin slice of unsalted butter per filet (about 1/8 inch)
- Fresh Thyme (optional)
In bowl combine all ingredients, except filets and butter. In a glass 9×13 baking dish place filets and cut a thin slice of unsalted butter for each and place on top. Then pour over liquid ingredients. Cover dish with aluminum foil and bake at 350 degree F for 30-45 minutes or until fish registers 145 degrees F internal temperature. Serve with fresh veggies and quinoa for additional protein and nutrients.
