Can’t go wrong with cheese…well unless you’re lactose intolerant (sorry). If you’re like me though, cheese is my biggest indulgence and a favorite addition to vegetables.
- 3 Tbsp unsalted butter
- 1.5 pounds fresh cauliflower, chopped largely
- 1/3 – 1/2 cup freshly grated parmesan cheese
- Sea salt & pepper to taste
Fill a large pot with water and bring to a boil. Add chopped cauliflower and sea salt to taste. Boil until cauliflower is slightly soft, about 3-4 minutes. Drain cauliflower and place in lightly buttered baking dish. Season with sea salt and pepper. Place 3 Tbsp of butter randomly in small slices over cauliflower. Cover is grated parmesan. Bake at 425 degrees for about 30 minutes until lightly browned.
