Stuffed Green Peppers

Green Peppers

Ingredients:

  • Peppers
    • 4 large green peppers, sliced in half
    • 1.5 pounds of ground turkey
    • 1 cup cooked brown rice
    • 1/4 cup onion, chopped
    • 1/2 – 3/4 cup tomato sauce
    • Salt & pepper to taste
    • 2 egg whites
  • Sauce
    • 1/2 cup hot water
    • 1 t flour
    • 1 cup tomato sauce
    • Salt & pepper to taste

Combine sauce ingredients and heat over low heat till smooth and warmed. Meanwhile cook ground turkey in non-stick skillet. Add onion, salt, pepper and cook until onion is sweating. Add tomato sauce and cooked rice. Take off heat and combine mixture with raw egg whites. Stuff mixture into green pepper halfs and place in baking dish. Bake at 350 degrees for about 20-30 minutes until pepper is soft. Serve with additional sauce to taste.
