Brown rice is a great way to get some tasty nutrition. It is packed full of fiber, vitamins, minerals, and good fats. Plus, it’s gluten free. Today’s recipe is a delicious way to enjoy this heart healthy whole grain.
- 3 cups cooked brown rice
- 16 oz can tomatoes, drained & chopped
- 1 small onion, chopped
- 2 cups cooked & cubed chicken
- 3 cups grated jack cheese
- 7 whole green chilies, slided thinly
- Salt & pepper to taste
- Sour cream
Combine rice, tomatoes, onion, chicken, cheese and green chili in a large bowl. Season to taste with salt and pepper. Bake, uncovered at 350 degrees for 45 minutes. Let cool 10 minutes before serving. Serve with small amount of sour cream on top to taste.
