- 1/2 brown rice syrup
- 1/2 cup almond or peanut butter
- 2 Tbs. coconut oil
- 1 tsp. vanilla extract
- 2 cups of unsalted mixed nuts
- 8-10 large pitted dates
- 1/2 cup of oats (optional)
- 2 Tbs. unsweetened cranberries or raisins
- 1/2 cup dark chocolate
Line a 9×13 baking dish with parchment paper. In a small or medium saucepan combine syrup, almond or peanut butter, oil, and vanilla and simmer until smooth, about 10 min. Meanwhile, soak dates for 15 minutes in warm water to soften. Then combine mixed nuts and dates in food processor. Pulse to combine and process until a coarse sand texture is formed. Mix in oats if necessary and pulse to combine. Then mix in stove indgredients and pour into baking dish. Spread evenly using the back of a spoon. It may be helpful to grab another piece of parchment paper press mixture evenly throughout dish. Chill in freezer for 2 hours. Cut into 12 rectangles to form bars. Keep refrigerated.
